On Thanksgiving Day, indulge in a scrumptious buffet featuring all of the holiday favorites from turkey, ham and prime rib to mashed potatoes, sweet potatoes, stuffing, and an assortment of vegetables and casseroles.  To conclude the meal, a selection of desserts and pastries will be available including pumpkin pie, pecan pie, apple pie, and more!

Cornbread Stuffing with Apricots and Walnuts

Chef Sean's Tasty Cornbread Stuffing with Apricots and Walnuts

Yield: 6 servings

Ingredients:

1 6 x 10 inch pan of cornbread (You can either make it fresh or use leftovers)

Or use

1 bag cornbread stuffing mix

8 ounces butter

1 onion (diced)

1 cup celery (diced)

4 ounces dried apricots (sliced)

½ cup walnuts (roasted)

¼ cup parsley (chopped)

1 teaspoon rubbed sage

1 teaspoon salt

1 teaspoon pepper

2 cups chicken or vegetable stock

 

Method:

In a large sauce pan, melt the butter. Once the butter has melted, add the onion and celery.

Cook until the vegetables are translucent.  Add the chicken or vegetable stock to the pan and heat until it starts to simmer. Add the cornbread, apricots, walnuts, parsley and seasonings. Cover and reduce the heat to low, stirring occasionally for about 10 minutes.

Serve with turkey and all the trimmings!

Due to the high altitude of the inn, peak leaf season begins in mid-October and continues through the first week of November.  During this time, the forests are ablaze with rich reds, purples, oranges and golds.  The fall weather is the perfect time to hike, play golf and tennis, and explore the magic of the grounds.

During the last two weeks of October, when the sun sets behind Whiteside Mountain, its shadow creates a perfect image of a Black Bear that dances across the tops of the colorful trees. This spectacular natural phenomenon, known as the “Bear Shadow,” is not to be missed! The best places to view the bear are along U.S. Highway 64 in Cashiers, about one hour before dark. Make sure you bring your camera so you can capture an image of the famous bear!

Many well-known waterfalls that cascade over the rock faces of the Blue Ridge Mountains are tucked away in the area surrounding the inn. The Horsepasture River is the source for four of the waterfalls in the area: Horsepasture Falls, Whitewater Falls, Drift Falls and Rainbow Falls. Whitewater Falls, with a rocky plunge of 411 feet, is the highest waterfall east of the Rocky Mountains. U.S. Highway 64 weaves under Bridal Veil Falls and over Toxaway Falls, providing visitors a unique view of two of the falls in the area.

A Tribute to Fall’s Favorite Fruit: The Apple

Fuji, Gala, Honey Crisp, and McIntosh are just some of the apples awaiting visitors at High Hampton Inn’s inaugural Apple Festival on Saturday, September 24. This all day, free event will celebrate the apple with a variety of products from three local growers from the Hendersonville, NC area. Guests will be able to sample a number of tasty treats such as homemade apple cider, apple ice cream, and other apple dishes prepared by Chef Sean and the growers.

In honor of September being National Apple Month and High Hampton’s inaugural Apple Festival, Chef Sean shared a different, but tasty recipe that truly highlights this crisp fruit.  This easy-to-make salad features two different types of apples and is the perfect fall side dish to share with family and friends.

Waldorf Salad

Yield: 1 quart

Ingredients:

3 red apples (cored and diced with skin on)

3 green apples (cored and diced with skin on) *Keep diced apples in water with a small amount of lemon juice until ready to mix. Make sure they are drained completely when mixing.*

½ cup    mayonnaise (cold)

¼ cup sour cream (cold)

¼ cup celery (diced)

2 ounces walnuts (roasted and chopped)

¼ cup raisins

¼ cup    honey

2 Tbsp. lemon juice

1 pinch  salt and pepper mix

Method:

Mix all of the ingredients together and serve chilled the same day.
